Paleo Pumpkin Chocolate Chip Muffins

Ingredients:

  • 1/2 cup pureed pumpkin
  • 1/3 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 3 eggs, whisked
  • 1 tsp. vanilla
  • 1/4 cup coconut flour
  • 1/2 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1/8 tsp. ground cloves
  • 1/8 tsp. ginger
  • 1/2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/2 cup mini chocolate chips

Instructions:

Preheat oven to 350 degrees.
Mix all wet ingredients in a bowl.
Mix all dry ingredients in a separate bowl.
Blend all ingredients together.
Add chocolate chips

I bake these in mini muffin pans for 15-17 minutes, or until firm. Makes approximately 2 dozen.
